Pumpkin Subzi (V)

This Pumpkin Subzi is one of my favourite ways to prepare pumpkin. In fact it's the only way my husband likes to eat pumpkin, which is why I decided to share it with you all! I've tweaked my Mum's recipe with a technique for tempering spices and mustard seeds that I learned from my travels in Dubai.

Although not overly spicy, its packed with flavour and is the perfect vegetarian main or can be served as part of a shared Indian feast.

  • 🍴 Double Serve

    Preparation:
    Step 1 - Defrost in Microwave or fridge overnight
    Step 2 - Microwave until hot (approx - 3mins)

    🥦 Vegan friendly
    🌶 Mildly spicy
    🥖 Best served with naan, roti or flat bread - get yours here

    Ingredients: Pumpkin, Mustard oil, whole dry red chillies, whole seeds of fennel, coriander and fenugreek, ginger & garlic paste, turmeric powder, chilli powder and salt to taste.

I'd never heard of Subzi but I won't forget it!

I chose this meal based on it being pumpkin based and the description making it sound delightful, I'd never actually heard of Subzi. It was better than I could have hoped, just a little spicy as it stated and overall a lovely, filling & flavorsome dish that I have already ordered again.

Yum, I agree, this is the best way to eat pumpkin. My mum was a little tentative before eating this dish, thinking there was too much pumpkin in one dish, but after the first bite, she was sold. A beautiful blend and balance of spices, as always in all of your dishes. Thank you for cooking for us Anushree.
