Asian Cucumber Salad

It’s light, vibrant, and has just the right kick (depending on how much chilli oil you add!). Best of all? You can whip it up in under 10 minutes.
Ingredients:

2 seedless cucumbers

¼ cup fresh coriander, chopped

¼ cup spring onions, thinly sliced

1 tbsp sugar

1 tbsp soy sauce

1½ tbsp rice vinegar

2 cloves garlic, minced

1 tbsp toasted sesame oil

1 tbsp chilli oil (optional, for extra heat)

1 tsp toasted sesame seeds
Method:

Prep the cucumbers: Slice into rounds or smash them lightly for extra texture. Add to a large bowl.

Make the dressing: In a separate bowl, whisk together the sugar, soy sauce, rice vinegar, garlic and sesame oil until the sugar has dissolved.

Toss and top: Pour the dressing over the cucumbers. Add the chopped coriander and spring onions. Drizzle with chilli oil if using, and sprinkle with toasted sesame seeds.

Serve immediately: This salad is best enjoyed fresh, while the cucumbers are still crisp and the herbs are fragrant.
