Makes 10-12 small pies

Ingredients

  • 3 Sheets Pampas Puff Pastry
  • 3 Sheets Pampas Shortcrust Pastry
  • 1 portion of Bec's Chilli
  • 100g Mexican Style Shredded cheese (or any cheddar, tasty, monterey jack manchego)

Method

  1. Preheat the pie maker while the puff & shortcrust pastry thaw.
  2. Defrost and reheat Bec's Chilli until just hot using a pot or microwave.
  3. Cut shortcrust pasty rounds for the base of the pies and puff pastry rounds for the lids.
  4. Place one pastry round in the base, spoon 2 heaped tbsp of the warmed chilli in the centre (don’t overfill), sprinkle a layer of cheese, then place puff pastry rounds over the top.
  5. Cook in the pie maker until pastry is crisp and golden, generally around 5–7 minutes (depending on your model).
  6. Remove the cooked pies onto a cooling rack and repeat with remaining pastry.
  7. Serve warm, complemented by sides like sour cream, guacamole, or salsa.
