With its savoury blend of beef, chorizo, black beans, and depth of spices, these pies are perfect as a hearty snack, lunch, or dinner sidekick. No pie maker? No problem! Create something just as good utilising a jaffle iron and bread for the ultimate chilli jaffle with gooey melted cheese.
Makes 10-12 small pies
Ingredients
- 3 Sheets Pampas Puff Pastry
- 3 Sheets Pampas Shortcrust Pastry
- 1 portion of Bec's Chilli
- 100g Mexican Style Shredded cheese (or any cheddar, tasty, monterey jack manchego)
Method
- Preheat the pie maker while the puff & shortcrust pastry thaw.
- Defrost and reheat Bec's Chilli until just hot using a pot or microwave.
- Cut shortcrust pasty rounds for the base of the pies and puff pastry rounds for the lids.
- Place one pastry round in the base, spoon 2 heaped tbsp of the warmed chilli in the centre (don’t overfill), sprinkle a layer of cheese, then place puff pastry rounds over the top.
- Cook in the pie maker until pastry is crisp and golden, generally around 5–7 minutes (depending on your model).
- Remove the cooked pies onto a cooling rack and repeat with remaining pastry.
- Serve warm, complemented by sides like sour cream, guacamole, or salsa.
