This nourishing dish features silky eggplant and scrambled tofu coated in a glossy, sweet-sour-spicy sauce that captures the flavours of the famous Chinese “fish fragrant” eggplant, without the fish and completely vegan. Finished with crunchy peanuts, aromatic chilli oil, and a side of fluffy jasmine rice, it’s a meal that’s as comforting as it is exciting.

Reheating Instructions:
1. Defrost meal in microwave or fridge overnight.
2. Reheat in microwave for 3-5 minutes or until hot. (Our foil is microwave safe!)
