Saltimbocca literally means “jump in the mouth” in Italian, and this dish lives up to its name. Davide has reimagined the Roman classic with chicken breast in place of veal, creating a lighter, healthier version that still honours the traditional flavours. Topped with crispy jamon and sage, and finished with a delicate white wine sauce, it’s every bit as elegant as something you’d find in a trattoria.

To balance the richness, Davide pairs the saltimbocca with broccoli that’s gently sautéed with garlic and a touch of chilli, adding vibrancy, freshness and just the right amount of heat. It’s a complete, satisfying meal that feels indulgent yet wholesome — a true expression of Davide’s style of cooking: unpretentious, nourishing, and rooted in authentic Italian tradition.

Preparation Instructions

Step 1 - Defrost in fridge overnight or remove lid and defrost in microwave
Step 2 - Reheat in the microwave for 3-5 mins or until hot
