A Wholesome Middle Eastern Grain Salad – Made by Lou with Love

This is Lou’s much-loved freekeh and lentil salad, a dish that’s as nourishing as it is beautiful to share. Freekeh, an ancient grain with a nutty, smokey flavour – is tossed with earthy puy lentils, roasted almonds, pepitas, pine nuts, sweet dried cranberries and red onion. A yoghurt, honey and cumin dressing ties everything together, creating a salad that’s full of colour, crunch and flavour.

Loved year-round in Lou’s home, this salad is perfect as it is, or you can toss through fresh herbs like parsley or mint just before serving for an extra burst of freshness. Whether it’s part of a mezze spread, served with barbecued meats, or simply enjoyed as a wholesome side, this is one of those dishes that feels festive but works just as well midweek.
