Gavin's 12 Hour Lamb Shoulder With Salsa Verde

The Ultimate Show-Stopping Centrepiece

This is lamb shoulder at its absolute best. Gavin cooks it for 12 hours sous vide in its own juices with red wine, stock, rosemary and garlic until it's so tender it literally falls apart at the touch of a fork. This is the kind of melt-in-your-mouth lamb that makes people go quiet at the table - in the best way possible.

Served with vibrant salsa verde, the fresh herbs and capers cut through the richness of the lamb perfectly. All you need to do is reheat it in the oven for 45-60 minutes, make the pan jus from the cooking liquid, and you've got a restaurant-quality centrepiece that'll steal the show. This is entertaining made easy.

Preparation Instructions

Step 1. Defrost in fridge first.
Step 2. Remove lamb from the bag, and place in the tray or a baking dish with some of the fat on top.
Step 3. Place lamb uncovered in the oven on 200c-220c for 45-60 minutes, and turn down or cover if colouring too much.
Step 4. To make sauce, reduce the remaining liquid in a pot by about half. Add a little cornflour to thicken if needed and you can also reduce a glass or two or red or white wine and add to the sauce. Serve with Salsa Verde and Pan Jus.

FAQ's

The 12 hours refers to Gavin's slow cooking method using sous vide - the lamb is vacuum-sealed and cooked at a precise low temperature for 12 hours straight. This incredibly gentle cooking process breaks down all the connective tissue and renders the fat, resulting in lamb that's unbelievably tender and falls apart without any effort. It's impossible to achieve this texture with traditional roasting methods. The long cooking time also means the lamb absorbs all those beautiful flavours from the red wine, rosemary, and garlic.

Salsa verde is a vibrant Italian herb sauce made with fresh parsley, basil, capers, garlic, lemon, and olive oil - think of it as a fresh, punchy condiment that cuts through rich meats beautifully. With slow-cooked lamb shoulder that's rich and fatty, you need something bright and acidic to balance it out. The salsa verde does exactly that - the herbs add freshness, the lemon adds zing, and the capers bring a briny saltiness. It's the perfect complement and transforms the dish from good to absolutely incredible.

At 1.6kg, this comfortably serves 6 people as a generous main course, but you could easily stretch it to 8 if you've got plenty of sides. Lamb shoulder is quite rich, so people often eat less than they think they will. If you're serving it as part of a larger feast with multiple mains (like Christmas lunch), you could serve even more people. The beauty of slow-cooked lamb is that it goes a long way - a little bit is incredibly satisfying because it's so flavourful and tender.
