Step 1 - Defrost ham and oranges in fridge 2 days prior to cooking
Step 2 - Preheat oven to 180°C and remove ham from packaging and place on a wire rack inside a deep oven tray.
Step 3 - Pour 3 cups of water into the bottom of the tray, roast for 45 minutes whilst basting the ham with the citrus glaze every 15 minutes. Cut oranges into 3mm slices.
Step 4 - Arrange slices of blood orange (supplied) on top of the ham, securing with toothpicks.
Step 5 - Continue to roast a further 30-40 minutes basting every 10 minutes until golden and caramelised.
Step 6 - Transfer to a serving plate and brush with left over glaze, remove toothpicks and carve.
