Davide’s gnudi are a true taste of Tuscany... soft pillows of spinach and ricotta, baked in a bright tomato sugo, topped with melted mozzarella and aged parmesan. This isn’t a modern twist or adaptation; it’s the authentic recipe he learned in a professional restaurant kitchen in Siena, where Tuscan traditions are treasured and passed down through generations.

Unlike heavier potato gnocchi, gnudi are light and delicate, almost melting in your mouth while still being hearty enough for a satisfying meal. Every bite balances creamy ricotta, fresh spinach, and rich Italian cheeses with the brightness of tomato and basil. It’s an elegant yet comforting dish that brings restaurant-quality Tuscan cooking straight to your table.

    Preparation (cook from frozen):

    Step 1 - Preheat oven to 180C

    Step 2 - Remove lid and bake for 18-22 minutes. (10-14 minutes if defrosted). Alternatively you can microwave for 3-5 minutes or until hot.

    🥗 This is a great complete meal but works well with a simple side salad.

    Ingredients: baby spinach, ricotta (milk), flour (wheat, gluten), parmesan (milk), eggs, mozzarella (milk), tomato, onion, garlic, basil, olive oil, salt.
