This is Afghanistan’s national dish for good reason. Fragrant sela rice is layered with golden carrots, plump raisins, and a tender halal lamb shank that falls straight off the bone. The meat is slow-cooked with cardamom, cinnamon, cumin and other aromatic spices until rich and flavourful, while the rice soaks up all the natural juices. It’s the kind of meal that transports you instantly — nostalgic for those who grew up with it, and a discovery for those tasting it for the first time.

Served with two traditional Afghan sauces to round out the experience, this dish is more than just dinner. It’s a cultural journey  the same one Syeda shares with her family at gatherings and celebrations. Ready in just 6 minutes from your microwave, it delivers the warmth and generosity of Afghan home cooking without hours in the kitchen.

Preparation Instructions

Step 1: Defrost overnight in fridge or defrost in the microwave on defrost setting.

Step 2: Remove lid and sauces from the container, reheat the Pulao in your microwave for approx. 6 mins or until heated through.

You do not need to heat the sauces.

Our foil is microwave safe! Please ensure when heating that the foil does not touch the edges of the microwave.

Ingredients: lamb shanks (Halal), salt, vegetable oil, sela rice, onions, carrots, raisins, cardamom, cinnamon stick, cumin seeds, tomatoes, coriander, green chilli, lemon.

Our meals are made in kitchens that also handle gluten, so they are not suitable for coeliacs.

FAQ's

Yes, Syeda’s Kabuli Pulao uses fully halal-certified lamb shanks. The shank cut is traditional for this dish because it becomes meltingly tender when slow-cooked, releasing rich flavour that infuses the rice.

Defrost overnight in the fridge (or use your microwave’s defrost setting), remove the lid and sauces, then heat in the microwave for around 6 minutes until hot. The juices from the lamb help keep the rice moist and flavourful. Serve the sauces at room temperature, they don’t need reheating.

While biryani layers rice with spiced curry, Kabuli Pulao is lighter and more aromatic, with a signature sweet-savory balance from carrots and raisins. It’s less about heat and more about fragrance — subtle spice, tender meat, and rice that’s steamed to perfection.

    Absolutely beautiful. Succulent lamb, tasty rice that we couldn't stop eating and perfect sauces to accompany everything. I have never tried this cuisine before but this dish had me googling recipes. Very generous serving and reheated perfectly as per the instructions. Don't hesitate.

    I’ve never tried Afghan food before and this was a real treat.

    Loved the delicately flavoured rice and the beautifully cooked lamb just fell off the bone. The grated carrots were almost caramelised after heating and just added that extra scrumptiousness. The two sauces gave the whole dish an added piquancy. We really enjoyed this.
