Davide's Eggplant Parmigiana (Vg)

"This is my Grandma's version of the eggplant parmigiana. Hers is a mouthwatering recipe made with layers of sliced eggplant lightly dusted in flour and then fried.
This is then layered with passata, fresh mozzarella, grated Parmesan fresh basil & oregano."

A great vegetarian option that goes well with a side salad and garlic bread!

    Reheating Instructions:

    Step 1 - Defrost first or cook from frozen

    Step 2 - Remove lid

    Step 3 - Single Serve: bake in a 180 degree oven for 45 mins (from frozen) or 30 mins (from defrosted). Double Serve: bake in a 180 degree oven for 60 mins (from frozen) or 40 mins (from defrosted).

    😋 Wonderful served with a fresh rocket and pear salad dressed with a balsamic vinaigrette

    Ingredients: Eggplant, passata, brown onion, garlic, mozzarella, parmesan, basil, oregano, salt, plain flour, extra virgin olive oil.
