Christina’s Kaffir Lime Lamb Curry is everything a slow-cooked curry should be: tender lamb that falls apart at the touch of your fork, simmered for hours in creamy coconut milk with fresh kaffir lime leaves, lemongrass, galangal, and warming spices. The flavours are deep and complex, yet balanced with a gentle heat that makes it comforting and approachable.

Reminiscent of a rendang, this Peranakan-style curry brings together Malaysian, Indonesian, and Singaporean traditions into one truly satisfying dish. At 400g, it’s generous enough to share between two when paired with jasmine rice – the kind of meal that feels celebratory but can be on your table in minutes.

  • Preparation:

    Step 1 - Defrost in microwave or fridge overnight - open pouch before reheating

    Step 2 - Microwave until hot (approx 3-5 mins)

    Ingredients: lamb, onions, lemongrass, galangal, ginger, garlic, chilli, candlenut, coriander, fennel, cumin, pepper, cinnamon, cloves, salt, sugar, coconut milk, chicken stock, canola oil, kaffir lime.

While similar in style, this curry has its own Peranakan twist. It’s slightly lighter, thanks to the kaffir lime and lemongrass, and it has a creamy coconut base rather than being cooked completely dry like a traditional rendang.

Peranakan cuisine is a unique fusion food culture that developed when Chinese immigrants married local Malay women across Southeast Asia, particularly in Singapore, Malaysia, and Indonesia. This "Nyonya" cooking style combines Chinese techniques with local Malay spices and ingredients, creating dishes that are more complex and aromatic than traditional Chinese food. Christina's family recipe represents generations of authentic Peranakan cooking knowledge passed down through her lineage.
