Umesh's Mughlai Chicken Curry

Title: Serves 2 (675g)

A royal Hyderabadi curry, slow-cooked to perfection

"This is a popular wedding dish from the Indian City Hyderabad. Also known as Hyderabadi Dum Chicken Curry, 'dum' means cooking in a sealed pot on slow fire. This makes the flavours incredible and the chicken tender too." – Umesh

Umesh’s Mughlai Chicken Curry is a celebration of India’s royal kitchens. Using the traditional dum method, chicken is marinated with yoghurt, saffron, garlic, ginger, and spices, then slow-cooked in a sealed pot until it’s meltingly tender. The result is a mild yet deeply aromatic curry that showcases centuries of Hyderabadi culinary tradition.

This generous 675g serve is brimming with chicken in a delicately spiced sauce, enriched with coriander, mint, and Umesh’s signature biryani spice blend. Elegant enough for entertaining yet gentle enough for the whole family, this curry is best enjoyed with basmati rice or warm naan for a delicious dining experience.

FAQ's

Mughlai cuisine originated from the royal kitchens of the Mughal Empire and is characterised by rich, aromatic dishes that use premium ingredients like saffron, yoghurt, and complex spice blends. Unlike South Indian curries that might be coconut-based or fiery hot, Mughlai dishes focus on subtle, layered flavours achieved through slow-cooking techniques. The dum method used in this curry creates incredibly tender meat and allows spices to infuse deeply, resulting in a more refined, restaurant-style finish that was originally served to royalty.

The dum method involves sealing the cooking pot and using very low, indirect heat - similar to slow braising. This technique allows the chicken to cook in its own juices along with the yoghurt and spices, making it incredibly tender while preventing any harsh or burnt flavours. The sealed environment creates a steam-cooking effect that helps the saffron, herbs, and spices penetrate deep into the meat. Even when reheated, you'll notice how the chicken falls apart easily and the sauce has that characteristic smooth, aromatic quality.

Absolutely! Mughlai curries are traditionally served at weddings and celebrations in Hyderabad, making this perfect for dinner parties or special family occasions. The mild spice level means it's accessible to most guests, while the sophisticated flavour profile and cultural story behind the dish make it an impressive centrepiece. You can easily scale up by ordering multiple serves, and it pairs beautifully with basmati rice, naan, and traditional sides like raita for an elegant Indian feast that showcases authentic regional cuisine.

    A versatile biryani

This is such a big serve of biryani, we have it as a side and even eat this for breakfast with a fried egg. It makes a great lunch too with a handful of baby spinach and avocado!

    Would like to order again

We enjoyed This Biryani a lot as it's not something we would cook ourselves. It was the double size and although it didn't appear to be that large, there was a generous amount of chicken packed in.
