Michelle's Baked Berry Cheesecake with Spiced Ginger Base

This beautiful baked cheesecake is extra special with the addition of baked in mixed berries. The ginger biscuit crumb base adds a festive flare and a little bit of Christmas spice!

  • 🍴 Serves 8

    Preparation:

    Step 1. Defrost in fridge overnight before slicing to serve.

    🍰 Serving suggestions:

    Top with fresh berries, serve with raspberry coulis & whipped cream!

    To make a simple coulis, blend 3 punnets of raspberries with a dash of fresh lemon juice and 2 tablespoons of powdered sugar for sweetness. Run the mixture through a sieve to remove the seeds and place in a pouring jug to serve.

    Ingredients: Gingernut biscuits, butter, cream cheese, eggs, vanilla, icing sugar and mixed berries

    Contains: Soy, Milk, Gluten, Eggs
