A Comforting Lamb Shoulder, Slow Roasted to Perfection
There’s nothing quite like lamb shoulder that’s been given the time and care it deserves. Gavin’s slow roasted lamb is cooked gently for hours with rosemary, garlic, and a splash of red wine until it’s meltingly tender. The result? A rich, flavourful lamb dish that feels just like something you’d serve at a long family lunch.
This complete meal is served with herb-roasted carrots, fluffy tri-coloured quinoa, and a vibrant salsa verde made from fresh parsley, basil, capers, mustard, garlic, lemon, and olive oil. It’s a dish full of colour and freshness, balancing hearty comfort with bright, zesty flavours. All the goodness of a home-cooked lamb roast, ready on your plate in minutes.

Growing up, I was always cooking and creating in the kitchen with my mother, growing fresh produce in our garden, experimenting with dishes at home, and was brought up eating kale, spinach and humous before they were well-known foods!
I have cooked in some of the best fine dining restaurants in Australia, but at home, and as a father of three, my food is all about comfort food that is unpretentious, wholesome, nutritious, and that the whole family can share. I love cooking with the best seasonal and local fresh produce and being able to transform this into something healthy and super tasty for everyone to enjoy.
