Matt's Beef Bourguignon With Mashed Potatoes

Title: Serves 1

A French Bistro Classic, Slow-Cooked And Ready For You

Experience one of France’s most celebrated comfort foods with Matt’s Beef Bourguignon. This isn’t just a stew – it’s a rich, authentic dish made the traditional way, with beef marinated overnight in red wine before being gently slow-cooked for hours until meltingly tender.

"I marinate the beef overnight in red wine to lock in the rich wine flavours. It is then slow-cooked for about 2½ hours in the wine but with lots of goodies, including mushrooms, carrots, speck and broth. Served with buttery mash, it's a classic French dish that you will find in many bistros throughout France!" – Matt

The slow braise with red wine, mushrooms, carrots, smoky speck, and beef stock creates a velvety sauce with incredible depth of flavour. Paired with creamy, buttery mashed potatoes, this single-serve meal delivers all the warmth and sophistication of fine French dining – no plane ticket (or hours of cooking) required.

FAQ's

Beef bourguignon is a true French classic from Burgundy, defined by its overnight red wine marinade and slow braising. The wine not only tenderises the beef but infuses it with a depth of flavour that you can’t get from stock alone. Ingredients like smoky speck, earthy mushrooms, and tomato paste create a velvety, restaurant-style sauce that sets it apart from ordinary stews.

Most of the alcohol evaporates during the 2½ hours of cooking, leaving behind only the concentrated, mellow flavour of the wine. While trace amounts of alcohol may remain, the dish is not alcoholic in taste or effect – the wine is used purely to build depth, acidity, and balance in the sauce.

Yes – this is designed as a generous, bistro-style portion for one, complete with beef, vegetables, and buttery mashed potatoes. It’s filling on its own, but you can also serve it with crusty bread and a green salad for an even more traditional French dining experience. For entertaining or larger appetites, ordering multiple serves makes it easy to recreate a French feast at home.
