Midweek Mexican Comfort Food – Made by Michelle with Love
Bring vibrant Mexican flavours to your table with Michelle’s chicken enchiladas, a wholesome twist on a classic comfort food. Each tortilla is filled with tender free-range shredded chicken, a hearty mix of kidney beans, chickpeas, lentils, black beans, and sautéed vegetables, all spiced with Michelle’s homemade blend of cumin, coriander, smoked paprika, oregano, and a touch of chili. Rolled and topped with tomatoes and cheddar cheese, they bake into a bubbling, golden tortilla bake that’s both nourishing and delicious.
Available in single, double, or family portions, these enchiladas scale easily for quick solo dinners or family mealtimes. The mix of beans and lentils adds protein, fibre, and texture, while the homemade spice mix keeps flavours authentic without relying on packet seasonings. Ready from frozen in 25–55 minutes (depending on size), they’re best served with guacamole and sour cream for a complete Mexican spread. Whether you’re after a satisfying weeknight dinner or a crowd-pleasing dish to share, Michelle’s enchiladas deliver hearty comfort with homemade flavour.

Hi I'm Michelle,
I'm a passionate home cook, recruitment manager and new mum who also has a side business 'Forage Sydney' hosting rogue dinner party dining experiences. In my mind there's nothing better than using seasonal, organic or free range ingredients to create delicious and nutritious food; this is what I strive to do both at home and for others. My food style is mixed, having travelled to many countries and sampling lots of interesting food, I tend to take inspiration from these experiences as a whole rather than pinpoint a specific cuisine, as long as it's tasty and makes you feel good!
