- ¾ cup sugar
- 3 tablespoons cornflour
- 1 pinch salt
- 1¾ cups milk
- 3 cups fresh or frozen berries
- 3 tablespoons unsalted butter
- 1 teaspoon vanilla paste
Method
- Blitz your berries! Process them slightly in a blender or using a bar mix.
- In a medium saucepan, mix sugar, cornflour and salt.
- Turn the heat on to low/medium and add the milk while whisking constantly.
- Add the berries and cook while stirring frequently, the mix will darken and thicken - this takes about 5 minutes.
- Remove from the heat and whisk in butter and vanilla paste.
- Pass through a fine mesh sieve to remove any lumps and store in an airtight container in the fridge.
