Homemade Berry Curd Recipe

Ingredients

  • ¾ cup sugar
  • 3 tablespoons cornflour
  • 1 pinch salt
  • 1¾ cups milk
  • 3 cups fresh or frozen berries
  • 3 tablespoons unsalted butter
  • 1 teaspoon vanilla paste

Method

  1. Blitz your berries! Process them slightly in a blender or using a bar mix.
  2. In a medium saucepan, mix sugar, cornflour and salt.
  3. Turn the heat on to low/medium and add the milk while whisking constantly.
  4. Add the berries and cook while stirring frequently, the mix will darken and thicken - this takes about 5 minutes. 
  5. Remove from the heat and whisk in butter and vanilla paste.
  6. Pass through a fine mesh sieve to remove any lumps and store in an airtight container in the fridge.
