Bec's Japchae (Korean Noodles) (V)

Title: Serves 2

A Classic Korean Noodle Dish – Colourful, Wholesome, and Family-Friendly

Japchae is one of Korea’s most popular noodle dishes, known for its glossy, springy sweet potato noodles and vibrant mix of vegetables. Bec’s version brings this tradition to life with glass noodles tossed with spinach, carrots, capsicum, onions, and mushrooms – all coated in a delicately balanced sweet-and-savoury sauce.

The unique texture of the noodles is what makes japchae so special – slightly chewy, bouncy, and satisfying in a way that wheat pasta never is. Bec’s sauce of soy, sesame oil, and just a touch of sugar clings to each strand, giving you layers of flavour in every bite. Completely vegetarian, naturally gluten-free, and gentle in seasoning, this dish is approachable for all ages – making it an easy family favourite for lunch or dinner.

FAQ's

Sweet potato starch noodles (called dangmyeon in Korean) are made from sweet potato starch rather than wheat, creating translucent, slightly chewy "glass noodles" that have a unique bouncy texture. Unlike regular pasta or noodles that can become soft when overcooked, these noodles maintain their distinctive bite and don't absorb sauce in the same way - instead, they're coated with flavours while keeping their characteristic texture. They're naturally gluten-free, have a neutral taste that absorbs seasonings beautifully, and provide a more substantial, satisfying chew that makes japchae such a delicious dish to eat.

Yes – japchae is one of the most approachable Korean dishes. It isn’t spicy at all and has a mild sweet-and-savoury flavour that children love. With familiar vegetables like carrots and capsicum, plus the fun texture of the noodles, it’s a great introduction to Korean cuisine for kids and hesitant eaters.

Traditionally, japchae can appear as both – it’s often served as a side at celebrations but is just as common as a main meal at home. Bec’s generous 500g serve, packed with noodles and vegetables, is designed as a complete, satisfying meal for two. Pair it with dumplings or a small side if you’d like to create a Korean-inspired feast.

Wish I had more stars to award this amazing meal. I heated it gently in a wok, and it was superb. The noodles were so delicious, and the other vegetables were perfect additions. It said for 2, but I ate it all, and would happily have it almost every night of the week. One I'll definitely be ordering again.

Gorgeous silky noodles, not too spicy and full of vegetables. Quick, easy and much better than any Uber eats I have ever bought. Easy to reheat in the pouch. I love going to my freezer and knowing that when I choose Food St meals that they will taste even better than if I made it myself. I shared this with a vegetarian relative who also loved it. This is one of those dishes that your body thanks you for eating - nourishment in every bite.
