Carrots roasted in an Italian sweet-sour glaze, balsamic and honey against capers and raisins

Paolo brings together beautiful orange, yellow and purple carrots, then finishes them with a sweet and sour glaze that makes this simple vegetable dish something really special.

Balsamic vinegar and honey give the glaze its lovely balance of sweetness and tang, while seeded mustard adds a little bite. Then there are the capers and raisins, which might sound like an unusual combination, but they're what make this dish so good.

The capers bring a sharp, salty contrast to the sweetness, while the raisins soften and become almost jammy in the oven. So every forkful has a little something different going on.

As theroasted rainbow carrots cook, the glaze reduces and caramelises, coating them in a beautifully sticky finish with golden edges. A scattering of fresh chives adds the finishing touch.

They're ready in around 40 minutes and can go into the same oven as your Christmas roast lamb.

Serving five to six alongside other dishes, thesehoney and balsamic glazed carrots are a wonderful way to bring colour, flavour and a little brightness to your Christmas table.

Preparation Instructions
  1. Defrost overnight in the fridge.
  2. Preheat oven to 180°C
  3. Drizzle the glaze over the carrots, season with salt, pepper and olive oil, and toss well to coat.
  4. Roast in the oven for 40 minutes, mixing occasionally, until golden.
