Iris’s Cambodian chicken rendang is more than a curry – it’s a dish she learned firsthand from a chef while living in Phnom Penh, and it quickly became her favourite from that time. Unlike the darker, slow-reduced Indonesian rendang, the Cambodian version is brighter and more aromatic, built on the philosophy of using fresh ingredients in generous amounts. Free-range chicken is simmered with lemongrass, kaffir lime leaves, galangal, garlic, and creamy coconut, then finished with a touch of shrimp paste for savoury depth and coconut sugar for balance.

This rendang is delicately spiced rather than fiery. Dried chilli gives warmth and colour without overpowering, making it a dish everyone can enjoy. The fragrance of kaffir lime and lemongrass fills the kitchen as it reheats, and the coconut base creates a sauce that’s perfect over steamed jasmine rice. With its mix of citrusy galangal, sweet-savoury coconut, and subtle umami from shrimp paste, Iris’s rendang captures the soul of Cambodian cooking – layered, aromatic, and deeply satisfying.

I'm originally from Cambodia. My first memory of connecting with food was when I was little and my mum was always busy in her shop, so she left the house work and cooking to me. As the eldest child in the family, I had to learn to cook and did the shopping as guided by mum. I remember I learnt to cook my first curry chicken when I was just 12 years old.

Cambodian rendang, like Iris’s, is lighter and more aromatic, with coconut, lemongrass, galangal, and kaffir lime providing fragrance. The sauce is creamier, less reduced, and designed to be spooned over rice.

Galangal is a root related to ginger but with a sharper, citrusy, almost pine-like flavour. It’s a key ingredient in Cambodian and Thai cooking because it gives curries and soups their fresh, lifted aroma. Ginger alone can’t replicate the distinctive flavour galangal brings to this rendang.

No – this rendang is rated mild. The dried chilli provides background warmth, but the coconut, coconut sugar, and fresh herbs mellow the dish. It’s designed to be full of flavour without overwhelming heat, making it a great introduction to Cambodian cooking.

    Delicious!

    Tastes as though it was cooked with absolute love and care. Not spicy, just extremely flavourful. I love to eat it with steamed rice and some veggies on the side - or even just some cucumber and tomato.

    So good, ultimate Cambodian comfort food!
