"This is my Grandma’s version of the eggplant parmigiana. Hers is a mouthwatering recipe made with layers of sliced eggplant lightly dusted in flour and then fried. This is then layered with passata, fresh mozzarella, grated Parmesan, fresh basil & oregano." – Davide

For Davide, this parmigiana is more than a meal — it’s a memory of his Nonna’s kitchen, where simple vegetables and a few good ingredients became something extraordinary. Each slice of eggplant is carefully floured and fried until golden, then layered with rich tomato passata, fresh mozzarella, parmesan, and fragrant herbs. The result is a bubbling, cheesy bake that’s deeply comforting yet elegant in its simplicity.

This is Italian home cooking at its finest: honest, generous, and made to share. It celebrates the eggplant itself — tender on the inside, with just enough structure to hold those layers together — while the cheese and tomato create that irresistible balance of richness and freshness. Preparation Instructions

Step 1 - Defrost first or cook from frozen
Step 2 - Remove lid
Step 3 - Bake:

Single Serve: bake in a 180 degree oven for 45 mins (from frozen) or 30 mins (from defrosted).

Double Serve: bake in a 180 degree oven for 60 mins (from frozen) or 40 mins (from defrosted).

Modern recipes often skip this step, but Davide keeps it, because it’s the difference between soggy layers and parmigiana that holds together beautifully.

On its own, it’s hearty enough to be a complete meal. For a classic family dinner, pair it with a crisp green salad and garlic bread. For something more elegant, Davide suggests a rocket and pear salad with balsamic vinaigrette to cut through the richness. However you serve it, this parmigiana is made to be shared around the table.
