When it came to a pie, I wanted something with a Cambodian flavour so I came up with Chicken Amok Pie and it became the most favourite pie with my family. I love to make them with fresh lemongrass, galangal, turmeric and kaffir lime leaf." - Iris

Each pie is filled with tender chicken cooked in coconut milk and a fragrant herb paste of lemongrass, galangal, kaffir lime leaves, and turmeric, then encased in golden, flaky pastry.

    Preparation:

    Step 1 - Preheat oven to 180C

    Step 2 - Bake for 8-10 minutes or until heated through and golden - If thawed

    Step 3 - Bake for 15-20 minutes or until heated through and golden. - If frozen

Amok is Cambodia’s national dish – a fragrant coconut curry traditionally made with fish and steamed in banana leaves. Iris has reimagined it with chicken and wrapped it in pastry. The curry filling still uses the key flavours of amok – coconut milk, lemongrass, galangal, turmeric, and kaffir lime – but presented in a pie that’s easy to enjoy at home.

The pie is mild in spice, designed to be aromatic and flavourful rather than hot. You’ll taste the citrus notes of lemongrass, the earthy warmth of galangal, the brightness of kaffir lime, and the golden depth of turmeric, all balanced by creamy coconut milk. The overall effect is exotic but very approachable.

Iris’ pastry is handmade for a flaky, buttery texture that complements the rich filling. For best results, heat the pie in the oven at 180°C – 8–10 minutes if thawed, or 15–20 minutes from frozen – until golden and crisp. An air fryer (5 minutes at 160°C) also works perfectly if you prefer extra crunch.

    Loved this pie, lots of flavour but not too spicy for my rather bland palet. So different to anything I've ever eaten. Really enjoyed it. Could have easily eaten 2.
