Authentic Vietnamese Pho, Slow-Simmered with Love
Pho (pronounced 'fuh') is one of Vietnam’s most iconic dishes, and Bec’s version captures everything that makes it so special. She begins by simmering chicken bones with ginger, onion, star anise, cinnamon, and other fragrant spices, letting the flavours develop low and slow into a delicate yet deeply aromatic broth. The result is a soup that feels light and restorative, yet rich in flavour—the kind of bowl you could happily eat for breakfast, lunch, or dinner, just as it’s enjoyed across Vietnam. Served with tender chicken and rice noodles, this pho delivers both nourishment and balance in every spoonful.
To finish, it’s best enjoyed the traditional way—ladled hot over noodles and paired with your choice of fresh herbs like Thai basil, mint, and coriander, plus bean sprouts, lime, and a dash of hoisin or chilli if you like a kick. Bec has done all the hard work of creating the broth, so you can simply reheat, add your garnishes, and have an authentic Vietnamese meal at home in minutes. It’s wholesome, fragrant, and made with love by Bec, who grew up treasuring this dish as both everyday food and a symbol of family gathering.
