Tommy's Butter Chicken Roti Pie

The pie that roti made better.

Butter chicken has been done a thousand times. Not like this. Tommy marinates his chicken in yoghurt and spices for a full 24 hours before it even touches the heat - then slow cooks it in tomato and his secret spice blend until the pieces are genuinely tender, finishing with cream for a perfect sauce. That filling gets wrapped in a light, flaky roti paratha and what comes out the other side is a pie that tastes like it was made by someone who thought about it.

Ready from frozen in under 10 minutes: defrost, microwave for 90 seconds, then a quick five minutes in the fan oven at 180°C to crisp up the roti casing. Eat it as it comes, or go full fusion - Tommy's suggestion is mash, peas and gravy, and he's not wrong.

Preparation Instructions

Step 1: Defrost in fridge overnight or use microwave defrost setting

Step 2: Reheat for 90 seconds in the microwave on standard setting

Step 3: Place in a 180°C oven for 5 minutes or airfry on 160°C for 5 minutes until golden and crispy.

FAQ's

Most butter chicken pies use standard shortcrust or puff pastry. Tommy uses roti paratha - a light, layered flatbread that crisps beautifully in the oven and brings a completely different texture and flavour to the crust. The filling itself is made from chicken marinated for 24 hours in yoghurt and spices, then slow cooked to order. It's handmade in small batches, not mass-produced, and the difference is obvious.

Defrost first — either leave it out until thawed or use the defrost setting on your microwave (set to approx 300–400g). Then microwave on standard setting for 1 minute 30 seconds until warm through the centre, followed by 5 minutes in a fan oven at 180°C to get the roti casing crispy. The two-step method is the key — microwave alone won't crisp the pastry.
