Verawaty's Hainan Chicken Rice

"Hainan Chicken Rice isn’t just a meal, it’s a tradition. Growing up, my mum would only make this dish for special occasions, especially on Chinese New Year's Eve when our family gathered around the table. She passed down her recipe to me, and over the years, I’ve added my own twist to make it even more flavourful. Now, it’s my kids' favourite dish, and I’m excited to share it with you."

This isn’t a meal you can rush and each step matters. Whole chickens are boiled in stock to keep them tender and juicy, then deboned. The chicken broth infuses the fragrant Hainan rice and pairs perfectly with the ginger/shallot and chilli sauce on the side.
