Mudgee ham, glazed dark with native Davidson plum and honey, sweet, tart and sticky enough to need a napkin.
An Australian Christmas isn’t complete without the ham, and glazing it is the one bit of Christmas cooking most people actually want to do. So we’ve done everything else. You’ll get a 3.5kg leg from Mudgee Meats, skinned and scored by hand and ready for the oven, with our glaze made in our kitchen and packed alongside. Brush, bake, baste once or twice, then carry it out yourself.
The glaze brings Davidson plum for a deep, tart sharpness that cuts through the richness of the meat, honey and brown sugar for dark, sticky edges, Dijon underneath, and warm spices including native cinnamon myrtle. As it bakes, it sets into a glossy lacquer that’s sweet, sharp and savoury all at once. Glazed in your own oven, it looks exactly how a glazed ham should, and your house smells like Christmas while you get on with everything else.
It serves a crowd as part of a spread, or a generous eight as the centrepiece. It’s just as good cold on Boxing Day, and the leftovers are half the reason to buy one.
Davidson plum is an Aboriginal food, gathered in the rainforests of northern New South Wales and Queensland for thousands of years, and it’s proof that an Australian Christmas ham doesn’t need a European glaze. Mudgee Meats sources from farmers who share their commitment to ethical, free-range produce.
