A soft marshmallowy pavlova base under a smooth set cheesecake, with mango and passionfruit poured over the top
There are two desserts that turn up at an Australian Christmas, and they are pavlova and cheesecake. So this is both of them, one on top of the other. A pavlova base underneath, soft and marshmallowy the way the inside of a good pavlova is, with a passionfruit cheesecake set over it, and mango and passionfruit coulis poured across the top.
The cheesecake is the cold, smooth part. Cream cheese and thick cream whipped together with passionfruit pulp through it, set rather than baked, so it stays light and cuts cleanly instead of sitting heavily after a long lunch. Passionfruit is what keeps it from being too sweet, the sourness runs right through the layer rather than appearing only at the top.
Then the coulis, which is simply fruit poured over, mango and more passionfruit, and it is where the colour comes from. Bright yellow against the white, with the seeds through it, which is what a pavlova looks like at Christmas and why it has been the dessert on that table for as long as anyone can remember.
The good part is what happens when you cut down through it. Soft meringue underneath, cold set cheesecake in the middle, sharp fruit on top, all three in one spoonful, sweet and sour and cold at once. It serves ten to twelve, it's designed to be served chilled, straight from the fridge, with fresh fruit or berries alongside if you want to round out the Christmas table further. No baking, no assembly, no pavlova anxiety.
