Paolo's Roasted Rainbow Carrots with Balsamic & Honey Glaze

Carrots roasted in an Italian sweet-sour glaze, balsamic and honey against capers and raisins

Paolo assembles orange, yellow and purple carrots together, then finishes them with a glaze that does a lot of work in one go.

Balsamic vinegar and honey give it the sweet-sour backbone, seeded mustard runs underneath with a bit of bite, and then there are capers and raisins through it, which sounds unlikely and is the best thing in the dish. The capers bring a sharp salt against the sweetness and the raisins go soft and jammy in the oven, so each forkful has something sweet and something sharp rather than just tasting of honey. Chives over the top.

As they roast the glaze reduces onto the carrots and darkens, the edges catch and go slightly sticky, and the sugars in the carrot do the rest. Forty minutes, the same oven the lamb is already in.

Serves five to six alongside other things. Very good with a roast, and lamb in particular, it's an easy way to bring colour and brightness to a Christmas spread.

Preparation Instructions
  1. Defrost overnight in the fridge.
  2. Preheat oven to 180°C
  3. Drizzle the glaze over the carrots, season with salt, pepper and olive oil, and toss well to coat.
  4. Roast in the oven for 40 minutes, mixing occasionally, until golden.
