Bring a touch of Christmas magic to your table with Nat’s Roasted Vegetable Wellington, a stunning vegan centrepiece that’s as delicious as it is festive.

"I wanted to create a vegan dish that's full of flavour and classy to put on an entertaining menu. I'm not vegan myself, but I feel like most dishes lack flavour and complexity. I don't skimp on flavour so I know this will make any vegan or meat-lover happy - it's that delicious!"

Wrapped in golden, flaky pastry, this Wellington is filled with a hearty mix of roasted seasonal vegetables, brown rice, herbs and caramelised onions, creating the perfect balance of flavour and texture.

It’s served with Nat’s dark and rich porcini mushroom gravy, slow-simmered to perfection for a deep, savoury umami finish that ties every bite together.

Thisplant-based festive showstopper will impress vegans and non-vegans alike. Simply bake, serve, and watch it disappear!

Preparation Instructions

Step 1 - Defrost in fridge overnight

Step 2 - Preheat oven to 180°C and place the wellington onto a baking tray lined with baking paper.

Step 3 - Brush the pastry of the wellington with an egg wash (or alternatively a plant based milk).

Step 4 - Bake for 50-60 minutes or until deep golden and crispy. (For an extra golden crust , brush half way through with another coat of egg wash or plant based milk).

Step 5 - While the wellington is baking, reheat the porcini gravy for 1-2 minutes or until piping hot.

Step 6 - Remove the wellington from the oven and slice to serve, topped with the gravy.

Please be aware that this is a guide only. All ovens work slightly differently and this should be taken into consideration.

Yes! This Wellington is 100% vegan. It’s handmade by Nat using only plant-based ingredients - no dairy, eggs, or animal products - and comes with a rich porcini mushroom gravy that’s also completely vegan.

We do suggest brushing with egg wash but this is optional, you can alternatively use a plant based milk.

Each Wellington comfortably serves 4 people as a main or 4–6 as part of a larger festive spread. It’s perfect for Christmas lunch, family gatherings or any special vegan feast.
