Lou's Duck Fat Roast Potatoes with Rosemary and Semolina

The potatoes that disappear first at Christmas lunch.

Roast potatoes are the thing everybody wants on the table and nobody wants to make. They need peeling, cutting, par-boiling, roughing up, a fat hot enough to spit, and an hour of oven space you do not have on Christmas Day. These are already done, and they go in frozen.

The fat is duck fat, which is what makes a roast potato taste like a roast potato in a restaurant and not one at home. It has a higher smoke point than butter, so it gets hot enough to crisp without burning, and it carries a savoury richness into the potato that oil alone never does. There is rice bran oil with it, which is neutral and takes the heat, and a sprig of rosemary through the tray so the scent goes into the fat and from the fat into the potato.

The semolina is the part people ask about. The potatoes are tossed in it before roasting, and the fine grains catch on the roughed-up edges and turn into a crust, which is how you get a shell that stays crunchy rather than a skin that goes leathery. It is an old trick and it is the difference between a good roast potato and one you remember.

And they go in frozen, which is not a shortcut, it is the reason they work. A thawed potato is a wet potato, and a wet potato steams. Straight from the freezer into a hot oven, the outside sets hard before the inside softens, which is exactly how a commercial kitchen does it. Do not defrost them, do not take them out early, just put the tray in.

About Your Cook

I am a country girl and my love of produce lives with me everyday. I have been cooking from a very young age, guided at first by the skillful and resourceful knowledge of my Mother and then through prolific exploration of food markets, of cooking and nutrition books, learning new techniques, experimenting with ingredients, learning the science of changes with heat and combining ingredients, the art of flavours.

In a nutshell, I love everything about food and cooking, from the growing and sourcing of fresh quality ingredients, thinking about the flavours, using my skill to create beautiful meals and finally sharing my meals with others. I am focused on meals that are dense with nutrition, that will bring joy to meal times and goodness to your body.

They're designed to sit alongside any protein, roast chicken, pork, beef, or a simple weeknight grill. They also work well as part of a bigger spread with other FoodSt sides.

Unfortunately, they're cooked in duck fat, so they're not suitable for vegetarian or vegan diets.
