The parcel dish that's become a family Christmas tradition.
Davide's barramundi is cooked al cartoccio - sealed in baking paper with a chermoula paste of ginger, garlic, coriander, cumin and sweet paprika, so the fish steams gently in its own spiced juices rather than drying out in the oven. It's a technique built for barramundi specifically: a fish that can turn dry quickly under heat, but stays moist and full of flavour when it's given nowhere to escape.
"I love barramundi because it's a fish that doesn't easily become dried after cooked, and this special way to cook al cartoccio (closed in baking paper) is enhancing the spices that are in the chermoula and are cooked with," says Davide. It's more than a weeknight dish for him, this recipe has become a must at his family's Christmas feast, and it's easy to see why once you've had it.
