There's a version of Pad Thai that comes from a packet. Then there's Verawaty's - rice noodles soaked the long way, chicken marinated for a full hour, and a sauce her family has been eating on repeat ever since she first made it. It takes patience to get right, and that patience is exactly what you can taste in every forkful.
Each 500g serve comes ready to reheat in minutes, defrost overnight or in the microwave, warm through, and finish with a squeeze of lemon and a handful of fresh bean sprouts. Add chilli flakes if you like heat. The noodles stay separate, the chicken stays tender, and the flavour is the kind that makes people go back for seconds without quite knowing why.

Delicious chicken rice. The chilli sauce and chicken rice is so good!
Add a little extra water when reheating the rice. I often have it with some bok choy on the side.
Portion size for this one isn't huge, it's more of a light meal size rather than a big dinner if you're really hungry.
