Davide's Side Of Barramundi With Chermoula

Title: Side of Barramundi (1.2kg)
Or pay together with

The parcel dish that's become a family Christmas tradition.

Every Christmas, Davide makes this beautifulbarramundi chermoula for his family, and it's become one of those dishes that simply has to be on the table.

Davide loves barramundi because it holds its moisture so well when cooked. And his favourite way to prepare it isal cartoccio, the Italian technique of baking fish inside a sealed paper parcel.

He takes a generous 1.2kg side of barramundi and pairs it with a fragrant North African chermoula made with cumin, coriander, sweet paprika, fresh ginger, garlic, lemon and olive oil.

It's a wonderfully aromatic combination, full of warm spices and citrus, but without any chilli heat.

The fish is wrapped in baking paper and cooked in the oven, where it gently steams in its own juices and all those beautiful flavours.

And the best part? Bringing the parcel to the table and opening it while everyone is gathered around. The steam escapes, carrying the wonderful aromas of lemon, garlic and spices. It's a lovely little moment that makes serving Christmas lunch feel special.

Davide likes to serve his barramundi with a fresh salad of coriander, mint, preserved lemon and Spanish onion. It's also the perfect partner for hispearl couscous salad, another of his family recipes on our Christmas menu.

Serving approximately eight to ten people, this is a beautifulChristmas seafood centrepiece for anyone looking for something a little different and a lot more flavourful than the traditional roast.

Preparation Instructions

Step 1: Defrost the fish in the fridge overnight before cooking.

Step 2: Preheat the oven to 180°C. Lay the barramundi fillet on a big sheet of baking paper (100 x 30cm) and pat dry with paper towel.

Step 3: Spread the chermoula paste over the top of the flesh of the fish.

Step 4: Fold the baking paper around the fish, pinching the long ends and rolling to create a parcel - See video below.

Step 5: Bake for 45 minutes, then serve straight from the parcel - let the aromas hit the table before you unwrap it.

Step 6: To add more theatre, have some pre-chopped parsley or other toppings such as pomegranate seeds, nuts, ready to sprinkle over the top of the fish.

FAQ's

Baking "al cartoccio" means sealing the fish in paper so it cooks in its own steam rather than direct dry heat. For a lean fish like barramundi, this keeps it moist all the way through and lets the chermoula spices infuse into the flesh instead of cooking off in the pan.

Chermoula is a North African spice paste built on ginger, garlic, coriander, cumin and paprika, brightened with lemon and olive oil. It's warm and aromatic rather than fiery - the kind of spicing that makes a simple piece of fish taste like something served for a special occasion

Leave the fillet sealed in its baking paper parcel and bake at 180°C for 45 minutes. There's no need to unwrap or turn it — the paper does the work, keeping the fish moist and the spice paste intact until it's ready to serve.
