Paolo's Zucchini, Leek & Parmesan Soup is built on a base of slow-cooked zucchini, leek, and Desiree potato, the kind of combination that quietly becomes something much greater than the sum of its parts. Fresh oregano and thyme give it herbal warmth, while pure cream rounds everything into a silky smooth texture that coats the back of the spoon just right.

And then there's the parmesan. You'll know it's there - this is not a subtle background note. It's a properly parmesan-forward soup, with that savoury, nutty depth right at the front of every mouthful. If you love parmesan, you will love this soup. If you're not sure, consider yourself warned (in the best possible way).

Best enjoyed with thick slices of toasted sourdough.

Preparation Instructions

From frozen (microwave):
Open pouch.
Microwave on high for 5–6 minutes, decanting into a bowl and stirring halfway through.

Defrosted:
Defrost overnight in the fridge or in the microwave.
Decant into a bowl and cover with a microwave safe cover.
Heat for 3 minutes, or until piping hot.
