The parcel dish that's become a family Christmas tradition.
Every Christmas, Davide makes this beautifulbarramundi chermoula for his family, and it's become one of those dishes that simply has to be on the table.
Davide loves barramundi because it holds its moisture so well when cooked. And his favourite way to prepare it isal cartoccio, the Italian technique of baking fish inside a sealed paper parcel.
He takes a generous 1.2kg side of barramundi and pairs it with a fragrant North African chermoula made with cumin, coriander, sweet paprika, fresh ginger, garlic, lemon and olive oil.
It's a wonderfully aromatic combination, full of warm spices and citrus, but without any chilli heat.
The fish is wrapped in baking paper and cooked in the oven, where it gently steams in its own juices and all those beautiful flavours.
And the best part? Bringing the parcel to the table and opening it while everyone is gathered around. The steam escapes, carrying the wonderful aromas of lemon, garlic and spices. It's a lovely little moment that makes serving Christmas lunch feel special.
Davide likes to serve his barramundi with a fresh salad of coriander, mint, preserved lemon and Spanish onion. It's also the perfect partner for hispearl couscous salad, another of his family recipes on our Christmas menu.
Serving approximately eight to ten people, this is a beautifulChristmas seafood centrepiece for anyone looking for something a little different and a lot more flavourful than the traditional roast.
