Mexican always tastes better with a great, homemade guacamole. Here, Michelle shares her quick and easy recipe for her tried and true tasty Guacamole.
You'll be surprised at how easy it is to create, all you need is a few avocado's, lime, coriander and onion (and maybe a jalapeno).
Michelle's Guacamole
Makes 2.5 cups
4 medium ripe avocado's, halved and pitted
½ cup finely chopped white onion (about ½ small white onion)
¼ cup finely chopped fresh coriander
1 small jalapeño, seeds and ribs removed, finely chopped
3 tablespoons lime juice (from about 1 ½ limes), or more if needed
¼ teaspoon ground coriander
Salt to taste
- Using a spoon, scoop the flesh of the avocados into a low serving bowl, discarding any bruised, browned areas.
- Using a fork, mash up the avocado until it reaches your desired texture.
- Add the onion, coriander, jalapeño, lime juice, dried coriander, and salt. Stir to combine.
- Taste and add additional salt until the flavours sing!

Michelle's Top Tips:
1. Make sure the avocado's are ripe but not too ripe! The way to test avocados for ripeness is by applying pressure on the top where the stem goes. If it gives way it's ripe, if it's hard it's not ripe.
2. Don't over-mash the avocado's. It tastes so much better if you have some chunks of avocado in there
