Keisha's South Indian Coconut Chicken Curry & Rice

Keisha starts this curry the way her family always has, onions low and slow in oil, whole spices in next, then ginger, garlic, and chicken. Coconut milk goes in last, softening the heat and bringing it all together. It's a simple process, but it takes time, and that's what makes it taste the way it does.

South Indian curries like this one tend to be lighter than what most people expect - less heat, more warmth, with the coconut milk doing a lot of the work. It's not complicated, it's just cooked properly. Rich and comforting without being heavy, full of flavour without being too spicy, it's the kind of food Keisha loves to cook and share at home. This is a complete meal and comes with steamed rice.

No. Keisha uses coconut milk instead of cream or yoghurt, so this one's completely dairy-free.
