This is the meal Olivia always reached for as a kid whenever her family went out for Malaysian Chinese food. Tender chicken, marinated in soy and ginger, is stir-fried with sweet onions and capsicum in a rich, savoury sauce, then finished with a generous handful of crunchy roasted cashews. Traditionally it's made with plenty of dried chilies, but Olivia's version leans on capsicum instead, keeping the flavour milder without losing any of the depth of the original.
Served over fluffy steamed jasmine rice, it's a wholesome, satisfying plate that brings genuine Malaysian Chinese home cooking to your table, not a restaurant reproduction, but the real dish Olivia grew up eating. She recommends a fried egg on the side to round it out properly.

Really good quality fried rice that was common place years back before egg fried rice & fried rice that look like it's just boiled rice with a splash of light of light soy

The portion size was big (can serve 2 for a light lunch). Rice was flavourful and not dry. The pork was tender and tasty with enough sauce and slices of pork to match the portion of rice. Enjoyed it very much. Stores well in freezer and heats easily in microwave after thawing.
