This isn’t your average couscous salad. Gavin combines fluffy, fragrantly spiced couscous with chickpeas, roasted pumpkin, a touch of sweet apricot and a vibrant green herb and citrus dressing. To finish, it’s sprinkled with crunchy roasted almonds and creamy feta creating a dish that’s nourishing, satisfying and full of flavour.
It’s wonderfully versatile too. Enjoy it as a quick and healthy lunch for one, or share it as a side with dinner for two. You can warm it gently in the microwave or simply enjoy it at room temperature, either way, it’s bright, balanced and delicious. Like all of Gavin’s food, it reflects his philosophy: wholesome, unpretentious meals that are made with care and fresh seasonal produce, designed to be enjoyed by the whole family.

🍴 Serves 1 as a meal or 2 as a side (350g)
Preparation:
1 - Defrost in the fridge overnight
2 - Poke a hole in the plastic or open plastic lid slightly
3 - Warm gently in the microwave for 1-2 minutes until just warmed through.
Can be served warm or at room temperature
