Gavin's Pumpkin Couscous Salad (Vg)

This is a tasty and wonderfully versatile dish, it makes the perfect lunch for one or side for 2. 

Fragrantly spiced couscous is tossed with chickpeas, roast pumpkin, a little apricot and a green herb & citrus dressing, and then finished with roasted almonds and feta sprinkled on top.

• 🍴 Serves 1 as a meal or 2 as a side (350g) 

  Preparation:

  1 - Defrost in the fridge overnight

  2 - Poke a hole in the plastic or open plastic lid slightly

  3 - Warm gently in the microwave for 1-2 minutes until just warmed through.

  Can be served warm or at room temperature

  Ingredients: couscous, chickpeas, pumpkin, apricot, almond, feta, spices, garlic, lemon, olive oil, vegetable oil, salt
