These fritters are incredibly versatile. Whether for breakfast, brunch, lunch, dinner or as a starter, they are a great way to have a meal packed with flavours and super nutritious. Blending some of the corn into the batter makes the whole fritter truly taste of corn, rather than just bursts of it when you bite into kernels. Also, these fritters are wheat free, using wholemeal spelt flour and besan flour instead, making a great option for a low GI and healthier diet.
We love having brunches in our family and most of the time we have them at home. I have created this corn fritters as they freeze so well and they are super easy to reheat, making our brunches very enjoyable and hassle free. Also is the perfect way to make my children eat more veggies and I can happily say that is one of their favourite weekly meals. They are full of hidden veggies that our kids will never know about.
Each serving contains 4 Fritters and sauce
Contains: Milk and milk products, eggs, cereals containing gluten and their products including wheat, rye, barley, oats, spelt
*** Note: Although these fritters don't contain any added wheat they are not suitable for coeliacs
Ingredients:fresh corn kernels, onions, eggs, coriander, pink Himalayan salt, black pepper, wholemeal spelt flour, besan flour, baking powder, olive oil. Smoky tomato sauce: plum tomatoes, olive oil, onion, red chilli, garlic, coriander, paprika, chilli flakes, pink Himalayan salt, black pepper
Reheating Instructions: Remove your corn fritters from freezer a few hours before serving or the night before. Preheat oven 180*C. Place fritters on a baking tray. Place tray in oven and your fritters will be ready in 20 min (25 mins if from frozen). Sauce: remove sauce from freezer the night before cooking fritters or defrost sauce in microwave. Serve sauce warm or room temperature.
