Vegetarian Lasagne (made with Quorn)

This recipe was loved by all the beautiful vegetarian children I cooked for, and I also would make extra for their family's as an extra help for all the hard working parents.
I start by making a Bolognese sauce with the vegetarian Quorn brand vegetable based mince, and onion, garlic, basil, chopped tomatoes, tomato paste, carrots, zucchini, pumpkin and sweet potato. I then layer the mince with lasagne sheets, a homemade bechamel sauce and cheeses to make a perfectly delicious and veggie-rich lasagne. 

Contains: Milk and Milk Products, Eggs, Cereals containing gluten and their products including wheat, rye, barley, oats, spelt
Ingredients: Lasagna sheets, flour, milk, garlic, onion, tomato puree tomato, chopped canned, carrots, zucchini, pumpkin, sweet potato, vegetarian mince, spinach, tomato sauce, salt and pepper, parmesan cheese, ricotta cheese, tasty cheese for topping
Reheating Instructions: Defrost in fridge overnight, preheat oven to fan forced 200°C and cook for 45 mins.

My first love of food started very young as my mum worked night shift and dad worked all day, there was never a constant of meals and lunches so I just started cooking myself and my sister. My parents were very old school meat and 3 frozen veg, my worst nightmare now! I've always love spices, curries, stews, casseroles… lots of savoury yummy tasty food.

My favourite books are cooking books I have them everywhere in every room! Herbs & spices are the key to most dishes in my repertoire, I’ve always been a cook who cooks by taste and testing. I feel you can never have to many vegetables, I love Anthony Bourdain as a cook and traveller, world food makes me so happy.

I have worked in cafes and take away shops since I was 12, from then I was a carer for 10 years, catering for the elderly and making sure they are getting healthy hearty meals everyday which was so important to me. Moving then into being a childcare cook for 3 years in between having my 4 children. Childcare cooking taught me to cook in bulk for 40 -50 children a day including cooking extra for time poor busy parents to take home. For me, Foodst is the essence of what I love about cooking and how I am used to cooking, I want to share my food and help others.

Delicious meal

This lasagne was deliciously satisfying, a wonderful comfort food that I enjoyed immensely. Usually vegetarian lasagne is full of vegetables, with very little protein but this dish had both protein and vegetables. Thanks!
