Vegan Thai Curry with Black Rice

This is a nutrient dense curry packed full of vegetables, herbs and nuts. The sauce is made from scratch and simmered with the lightly steamed vegetables and then served with black rice.
My vegan and non-vegan family and friends love this curry and I hope you do too!
Contains: Peanuts and peanut products, Soybeans and soybean products (eg Miso, soy milk etc)
