Charred eggplants are cooked together with green peas and potato in a north Indian style tempering of onions and tomatoes scented with fennel seeds. This is a vibrant dish where you can taste the smokiness of the eggplant. Delicious!
I grew up disliking eggplant until I ate this dish during my work stint in New Delhi. I loved it so much that I learnt how to make it and added my twist to it .
