Smoky Eggplant with Potato and Peas

Charred eggplants are cooked together with green peas and potato in a north Indian style tempering of onions and tomatoes scented with fennel seeds. This is a vibrant dish where you can taste the smokiness of the eggplant. Delicious!

I grew up disliking eggplant until I ate this dish during my work stint in New Delhi. I loved it so much that I learnt how to make it and added my twist to it .

Ingredients: Mustard Oil, Cardamom Green, Whole Cloves, Cinnamon, Fennel seeds, cumin seeds, Onion, chopped Ginger, Garlic, Garam masala, Turmeric powder, Chilli powder, Coriander powder, Tomato crushed, Fenugreek leaves, Tomato ketchup, Sugar, Eggplants, Potato, Green peas, Tamarind
