Roasted Salmon Fillet with Cherry Tomatoes, Oranges and Barberry Salsa
Salmon fillets served with a fresh homemade salsa made with tomatoes, oranges, maple syrup, barberries and coriander. The barberries add a zesty zing. This dish can be served at room temperature.

To Serve: Remove fish from fridge 30 minutes before cooking. Heat a BBQ to high heat or oven 230*C. Grill or bake skin-side down for 18 - 20 minutes . Shake the salsa container well to combine ingredients. Spoon salsa over fish and decorate with coriander leaves.
