These Red Bean Pancakes are a sweeter alternative to my traditional Shallot Pancakes, they are a hit with the kids and a fantastic lunch box idea.
First, I make the dough with plain flour and water. To make the red bean paste I soak Adzuki Beans in water overnight and then cook them until they are very soft. I add brown sugar, olive oil, and salt and cook until it the beans break down into a sweet red bean paste. I divide the dough into small pieces, roll it out and then fill with red bean filling, shape and freeze.
One day, I made red bean pancakes because my kids wanted something different to my Shallot Pancakes. So it’s become something new in our family and I think red bean is very good for our body as well.
Contains: Cereals containing gluten and their products including wheat, rye, barley, oats, spelt
Ingredients: Plain Flour, Red Adzuki Bean, Brown Sugar, Salt, Olive Oil
Reheating Instructions: No need to defrost. Please take them out from the freezer, heat up the pan on medium low heat, add a small amount of oil, pan fry each side until golden brown.
