Rani's Spicy Eggplant

If you love eggplant, you are going to love this dish! This South Indian Style eggplant dish (otherwise known as Brinjal Fry) is absolutely delicious. Mustard seeds, cumin seeds and curry leaves are tempered in oil and then fried with eggplants and onions, tomatoes, ginger, garlic and spices. There is a slight kick to this dish but its not too hot! 

Ingredients:

Oil, eggplants, mustard seeds, cumin seeds, curry leaves, onions, crushed chilli, tomatoes, ginger & garlic paste, red chilli powder, turmeric, salt, garam masala, coriander and lemon juice.

Reheating instructions:

Defrost container, and place in microwave for 2 minutes. Remove, stir, and return to reheat for another minute. It’s ready to serve.

In oven: preheat oven to 180C; place defrosted eggplant into ovenproof bowl, cover with foil. Heat for 15 minutes, remove & stir.

Check if heated through. If not warm enough return to oven and heat for a further 10 minutes.
