My super filling, comforting and delicious creamy leek and potato soup is inspired by my travels around Europe and it’s perfect for colder temperatures here in Australia. I use quality ingredients and sauté the onions, potatoes and leeks until they’re soft and fragrant before adding in cream and letting it all simmer together. When it’s blended the soup is silky smooth and cream, topped off with a sprinkle of chives for a satisfying, heartwarming bowl of comfort food.
Preparation: Step 1 - Defrost in your fridge overnight Step 2 - Microwave until heated through (approx 3 mins)
