Free Range, Rolled Pork Loin Roast

This high quality rolled free range Pork Loin comes from Melanda Park in the Hawkesbury, courtesy of Shiralee Meats. The loin is rolled and has a great skin for crackling, prepped and ready for you to cook and impress your guests.

🍴 Serves 4-6, each roast weights approx 1.6kg 

Preparation:

Step 1 - Defrost your Pork Loin in the fridge (2 nights before serving)
Step 2 - Remove your roast from the packaging and pat dry with paper towel.  Leave the roast uncovered in the fridge for 1 hour, or ideally overnight.  
Step 3 - Rub the roast with 1 tablespoon of vegetable oil and salt generously, making sure the oil and salt penetrate the scores.
Step 4 - Preheat oven to 220 celsius
Step 5 - Place the roast on a wire rack inside a baking tray and cook at 220 celsius for 10 mins
Step 6 - Turn oven down to 160 celsius and cook for a further 45 mins.
Step 7 - Rest the meat for 10 mins before slicing
